Nasturtium Vinegar


Fill a jar loosely with clean nasturtium flowers.  Add 1 generous tablespoon chopped green onion, 2 cut cloves of garlic and a tiny red hot pepper.  Fill the jar with red wine vinegar, cork it tightly and let it stand for two months.  Add 1/2 teaspoon salt and strain through a filter lined funnel into sterilized bottles or jars.

Nasturtiums grown profusely in Southeastern Alaska and make an excellent vinegar.
